It’s simply (heh!) 2 parts sugar for 1 part water. Most homemade recipes and simple syrup products found in stores are 1:1.

Glad you asked! We feel strongly that 2:1 syrup is superior to 1:1 for a few reasons:
- Higher sugar concentration = much longer shelf life
- You’ll get a better mouthfeel in your cocktails and mocktails
- 2:1 curtails unwanted drink dilution with more sweetness
- Bigger bang for your buck. You’ll use less surrup. in each drink than traditional simple syrups to get your desired sweetness

Surprisingly, no because of…science. Liquid sweetness is measured on something called the brix scale.
A 2:1 ratio has a brix of 66% meaning it’s about 33% sweeter than a traditional 1:1 mixture. So, it’s actually only 1.5x as sweet and not 2x as you might think. Fascinating stuff!

If you add ½ oz of traditional 1:1 simple syrup to a drink, try adding just ⅓ oz of surrup. There will be no discernible difference in taste, but you will notice a smoother, velvety mouthfeel. Math is not mathing? Refer to the table below.
